EGGS BENEDICT

Brunch for Mom

There are different accounts as to the origin of this classic dish, but we know that perfectly poached eggs form the foundation. Mother's Day presents the perfect time of year for Brunch, and with Eggs Benedict as the main course, you're sure to please your mother, or anyone else at the table. A fresh English muffin, and thick sliced ham or Canadian Bacon are essential, as is the finishing touch of warm Hollandaise sauce, or for a quicker version of Hollandaise Sauce, make Blender Hollandaise Sauce. For variations on the theme of Eggs Benedict, place the poached eggs on top of Creamed Spinach, or Fried Green Tomatoes, instead of a toasted English Muffin.


EGGS BENEDICT

2 to 4 servings
For variations on a theme, place the eggs on top of Creamed Spinach or Fried Green Tomatoes.
Prepare and drain well, and keep warm:
  4 Poached Eggs
Place on warmed plates or a warmed serving platter:
  2 English muffins, split, toasted, and buttered
Cover with:
  4 thick slices ham or Canadian bacon, warmed
Top with the well-drained eggs, then top the eggs with:
  1⁄2 cup Hollandaise Sauce or more if desired
Serve immediately, passing extra sauce on the side.
