I always love trying new recipes and I'm never disappointed with anything I try from the Joy of Cooking. I'm using the 75th Anniversary edition and I wanted to try Dee's Corn and Tomato Salad on page 272 for a BBQ next weekend. My only question is....
The 3 cups of corn kernels (cut from the cob)....
Is the corn cooked or do you use the kernels raw?
Thanks so much,
Rebecca

Dee's Corn and Tomato Salad
Dee's Corn and Tomato Salad is really fabulous. I don't think you'll be disappointed. Personally, I love raw corn. These days, corn is so sweet that it really doesn't need cooking. However, if your corn is on the starchy side, it never hurts to boil it for a quick minute or two, but it shouldn't take longer than that. Either way will work, though. Hope this helps!
I love my corn grilled.

I love my corn grilled.
(Or okra, or onions, or squash, pineapple, or really anything else for that matter)
I know it is an extra hassle, but if you have the grill burning throw the corn on for a few minutes. It will get that smoky flavor with the cool tomatoes. I think I have to go grill some corn now.
Thanks for reminding me of
Thanks for reminding me of how excellent grilled corn is, LesL. I agree. If you have the time or the inclination to grill the corn before adding to the salad, that would really be ideal.
