JOY FRIENDS

When the time came to turn to experts for particular topics in the many revisions of JOY, Irma and Marion worked with bakers, butchers and chefs in their general neighborhood. With high tech communication and high speed shipping, our neighborhood includes the many experts we have often admired. They helped make the 75th anniversary edition a reliable friend by reviewing existing material, revising that which needed it, and rewriting new material that was missing - all with a loyal eye on JOY's style, it's friendly voice, and its encyclopedic content.

When it came time to edit, revise and restore the beloved JOY sections on keeping and canning food, we knew we would need an expert's opinion. After following some leads given to us by Shirley and Arch Corriher, we were led to Elizabeth. In the spring of 2001, we called Julia, and asked her to review and critique our vision for the 75th anniversary edition. The author of Cookwise, and our dear friend, Shirley worked alongside Maggie and Arch, as she lended her expertise on all things food and science. In particular, Shirley provided detailed answers to our questions for the sections on starches, leavenings and flour as Maggie reviewed and updated the Know Your Ingredients chapter in JOY. Deborah Gray

Rebecca Gray
Author and hunter, we were inspired to call on Rebecca after reading her book Eat Like A Wild Man. Her knowledge and witty way of dealing with hunting and cooking wild game appealed to us all, and we loved the way she wrote about a topic foreign to many cooks. We appreciate her expertise on foraging, hunting, making maple syrup and fishing, so meet Rebecca, our friend in the wild kitchen.

Ikki Matsumoto

Ikki Matsumoto
Ikki has worked with Ethan and his mother Marion for the illustrations in the 1975 edition of JOY. He is incredibly talented and provided the foundation for the illustrations in this book. Meet Ikki.

Anne Mendelson

Anne Mendelson
If anyone knows about the history of JOY, it's Anne. She spent numerous years visiting Cockaigne, the family home in Cincinnati, studying family documents and archives in preparation for her book Stand Facing the Stove. When it came time to write the history chapter for the 75th Anniversary edition, it was obvious who we needed to call upon to write this chapter. Here's Anne.
